Roast Beef Sandwich with Black Radish Mayo

Yields: 2 Sandwiches
Ingredients for the Black Radish Mayo:
1/2 Small Black Radish – peeled and grated
1/4 cup White Vinegar
Pinch Kosher Salt
1/2 Cup Mayonnaise
Black Pepper
Directions for the Black Radish Mayo:
Place the grated black radish in a jar, pour the vinegar over the top along with a pinch of kosher salt. Stir to combine and then press on the radish so that it is completely covered with the vinegar. Add a little more vinegar if necessary. Cover the jar and place in the fridge for 24 hours. Then when you are ready to prepare the mayo, lift the radish out of the jar along with a bit of the clinging vinegar and combine with the mayonnaise. Season with a little freshly ground black pepper.
Ingredients for the sandwich:
6-8 oz Roast Beef – sliced
2 Tbsp Black Radish Mayo
4 Slices of Wheat Bread
1 Cup Baby Spinach
2 Thin Slices Red Onion
Directions for the Sandwich:
Spread the black radish mayo on both sides of the bread. Lay the roast beef on top, then add the spinach and sliced red onion. Close the sandwich. Slice and serve. Makes 2 sandwiches.  For more information:
