Green Eggs

This recipe is a new favorite in Julie’s house.  It’s a great way to get some greens and good nutrition into the morning meal.
Loosely based on Jessica Seinfeld’s Green Egg Recipe (she uses spinach).

5 large (organic) eggs
1 bunch of organic firecracker lettuce or any other bunch of dark greens
1/4 cup of Strauss family organic half and half
High quality freshly grated parmesan cheese
Salt and pepper
1 Tbsp organic butter 

Saute the greens in a little butter or olive oil until they are limp.  Let cool, and then blend in a magic bullet or blender.
Whisk the eggs with the puree and salt.
Melt the butter on the same skillet.  Add the egg mixture, reduce heat and cook for several minutes, stirring occasionally.
